1. Egyptian Shakshuka:

Ingredients:

- 4 large eggs

- 1 tablespoon vegetable oil

- 1 onion, finely chopped

- 2 cloves garlic, minced

- 1 red bell pepper, diced

- 1 green bell pepper, diced

- 1 can (14 ounces) diced tomatoes

- 1 teaspoon ground cumin

- 1 teaspoon ground paprika

- Salt and pepper to taste

- Fresh parsley leaves for garnish

Instructions:

1. Heat the vegetable oil in a skillet or frying pan over medium heat.

2. Add the chopped onion and minced garlic to the pan. Sauté until the onion becomes translucent.

3. Add the diced bell peppers to the pan and cook until they are slightly softened.

4. Pour in the diced tomatoes, along with their juices, into the pan. Stir well to combine with the vegetables.

5. Sprinkle the ground cumin and paprika over the mixture. Season with salt and pepper to taste.

6. Simmer the mixture for about 5-10 minutes until the flavors meld together and the sauce thickens slightly.

7. Create small wells in the sauce and carefully crack the eggs into each well.

8. Cover the pan and cook for about 5-7 minutes, or until the eggs are cooked to your desired level of doneness.

9. Remove from heat and garnish with fresh parsley leaves.

10. Serve the Egyptian shakshuka hot with crusty bread for a hearty and flavorful meal.

2. South African Bunny Chow:

Ingredients:

- 4 large eggs

- 4 small bread rolls or loaf bread

- 1 tablespoon vegetable oil

- 1 onion, finely chopped

- 2 cloves garlic, minced

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1 teaspoon turmeric powder

- 1 teaspoon curry powder

- 1 can (14 ounces) diced tomatoes

- 1 cup cooked meat or vegetables of your choice (such as chicken, lamb, or potatoes)

- Salt to taste

- Fresh cilantro leaves for garnish

Instructions:

1. Hard-boil the eggs, then peel and set them aside.

2. Slice off the tops of the bread rolls and hollow out the centers, creating a bread "bowl."

3. Heat the vegetable oil in a skillet or frying pan over medium heat.

4. Add the chopped onion and minced garlic to the pan. Sauté until the onion becomes translucent.

5. Sprinkle the ground cumin, ground coriander, turmeric powder, and curry powder over the onions. Stir well to coat the onions with the spices.

3. Nigerian Akara (Bean Fritters):

Ingredients:

- 2 cups black-eyed peas, soaked overnight and peeled

- 1 small onion, chopped

- 2 cloves garlic, minced

- 1 red bell pepper, seeded and chopped

- 1-2 scotch bonnet or habanero peppers, seeded and chopped (adjust to desired level of spiciness)

- Salt to taste

- Vegetable oil for frying

Instructions:

1. Rinse the soaked and peeled black-eyed peas, then transfer them to a blender or food processor.
