Street Corner Soymilk

Like many Asians, I have always had trouble digesting dairy. As a kid, I drank a lot of soymilk; it was always easy to find, especially when I was living in Asia. In the mornings, I’d walk by street stalls selling freshly made soymilk, usually served with you tiao, or fried dough sticks. Although soybeans get a bad rap in the United States, soymilk is one of my favorite plant-based milk alternatives because it’s one of the highest in protein, is so creamy (no gums or fillers necessary), and is fairly neutral in flavor. That said, there’s a huge difference between store-bought and fresh soymilk. You can buy fresh soymilk if you a tofu shop accessible to you. The flavor is incomparable. You can also try your hand at making fresh soymilk at home; it takes a little patience, but all you really need are soybeans and water.
