Greek Shrimp Orzo Salad

Ingredients:

● Orzo pasta: 1 cup

● Large shrimp peeled and deveined: 1 pound

● Cherry tomatoes, halved: 1 cup

● Cucumber, diced: 1/2 cup

● Kalamata olives, pitted and sliced: 1/2 cup

● Red onion, finely chopped: 1/4 cup

● Feta cheese, crumbled: 1/2 cup

● Fresh parsley, chopped: 2 tablespoons

● Extra-virgin olive oil: 3 tablespoons

● Lemon juice: 2 tablespoons

● Dried oregano: 1 teaspoon

● Salt: 1/2 teaspoon

● Black pepper: 1/4 teaspoon

Instructions:

● Prepare the orzo pasta according to the directions on the package. When you're done, drain the water and let them cool.

● In a skillet, cook the peeled and deveined shrimp until they are opaque and cooked through. Set aside to cool.

● Now combine the cooked orzo, cherry tomatoes, diced cucumber, sliced Kalamata olives, chopped red onion, crumbled feta cheese, and chopped fresh parsley in a large mixing bowl.

● Gently fold in the cooked shrimp with the salad base.

● Mix the extra virgin olive oil, lemon juice, dried oregano, salt, and black pepper in a small bowl. Mix the ingredients well to make sure they mix evenly. Once the dressing is ready, pour it over your salad and toss everything together until the vegetables are well coated with the sauce.

● Put the salad in the fridge for 30 minutes to let the flavors mix.

● Serve chilled or at room temperature, as per your preference.

● Enjoy this refreshing and flavorful salad as a light and satisfying meal!
