Contrary to legend, French Benedictine monk Dom Pérignon did not invent bubbly Champagne. No single individual did. Dom Pérignon, however, was a master blender. While he made still wines, his insistence on using the right grape varieties in the right proportions was copied by other vintners, including clerics, much later when Champagne finally began to sparkle!
